What does the name HiFri® stand for?

HiFri® is an astringency of “High Tech” (because of the advanced technology) and “Fri” stands for frying.

What is the difference between HiFri® and the traditional deep-frying methods?

The difference is the fact that we do not use frying fat as a medium for heat transfer. Instead of frying fat we use steam and hot air in the heating process.

How does the HiFri® work?

The HiFri® uses a combination of steam and hot air during the frying process to replace the frying fat used in traditional deep-frying. Using French fries as an example, traditionally the frying method revolves around the French fries being covered in a thin layer of fat that is continuously replaced with another layer, providing constant heat transfer. However, the HiFri® replaces this thin layer with hot air and steam.

How do you ensure that the product characteristics are similar to traditional deep-fried products?

Preparation time is crucial. If this is longer than needed the product characteristics change too much. Taking bake-off bread as a comparison: baking-off with high temperatures for a short time gives a thin crust, while baking-off longer but with a lower temperature creates a thicker crust.

Is it possible to prepare French fries and snacks simultaneously in the HiFri®?

Just as in frying fat this is not recommended, since the preparation times are not equal to each other. The HiFri® is designed for batch production with specific settings for each product.

Does the HiFri® require ventilation/exhausting?

The HiFri® requires ventilation to deal with excess steam, as well as the odors released by the products. Placing the HiFri® under a regular exhausting hood is sufficient. Another option is a exhausting hood with a condenser unit that can be placed on the HiFri® unit ensuring that the steam is fully condensed and ventilated. Moreover, this unit contains a ventilation system with carbon dioxide filters which adequately break down odors.

Aren't French fries just supposed to be prepared with oil/fat?

In any way it requires fat to make French fries out of potatoes. The only the question is how fat these need to be in order to provide acceptable taste. We believe that French fries with 5% fat have adequate taste.

Are products prepared in the HiFri® healthier?

Healthiness depends on the complete picture of diet, lifestyle and exercise. It is true that the total calories of products are significantly lower when prepared in the HiFri®, compared to preparation in frying fat. In the case of average consumption, one portion French fries and two snacks a week, preparation in the HiFri® instead of the traditional frying pan will reduce yearly fat intake by almost 2 liters. Will there be a consumer version launched on the market?

Based on the experience that we are gaining in the professional market we are considering the possibilities of a consumer version.

Is HiFri® really the first or is it a modification of an existing concept?

The concept has existed much longer and has been implemented in various ways; take oven products or microwave developments as examples. However, the big difference is that the HiFri® is able to match the product characteristics comparable to those created during the traditional deep-frying process.

What is the unit cost price?

The price for the base unit is € 10.550,- excluding VAT and installation costs.

Do French fries and snacks no longer contain any fat?

The French fries that are used in the HiFri® contains fat from the pre-frying process. Without this fat it is not possible to make French fries. However during the frying process in the HiFri® no additional fat is added and during the process some fat is actually extracted from the product.
Snacks of course are composed of ingredients that contain animal fats and such. It is important to select French fries that are pre-fried in the right fat. That is why HiFri® has chosen to collaborate with McCain. For snacks, we collaborate with Beckers. Namely, Beckers has a wide selection of snacks with a better nutritious value than traditional versions

There are currently two registered patents for the HiFri®.

Yes, we collaborate with McCain for all potato products en with Beckers for all snacks. These two companies are the most active in delivering responsible products to the consumer which directly makes them logical partners for HiFri®.

Is the HiFri® compatible with other products?

In principally this is possible for various products. However, not all products are compatible with the HiFri®. The selected products from McCain and Beckers are fully compatible with the HiFri® and the pre-programmed settings ensure perfect results.
