It is now possible to fry French fries and snacks without the use of fat or oil, without crispiness or taste going to waste. Namely, the HiFri® is capable to fry products without the use of frying fat in the same amount of time as traditional deep-frying methods. Due to the special technology that the HiFri® (High Tech Frying) uses, it is possible to prepare high quality French fries and snacks.
Why frying without oil?
The process of deep-frying ensures the product to get a crusty outside. This crust is what gives French fries and snacks a delightful taste. However, this popular method of preparation has received a negative image over the course of time. This is not particularly caused by the technology itself, but rather by the fact that mistakes are made during the process. The stories about old and (disintegrated) fat, frying temperatures that are too high and saturated fats have caused deep-frying to have taken a negative tone. By developing a system that no longer requires the use of frying fat, HiFri® has removed those risks associated with deep-frying.

The most important criteria in the development has always been the final product: French fries and snack. We have the conviction that French fries and snacks just have to be tasty. That is why no concessions have been made during the development of the HiFri® concerning the taste and crispiness of the products.
The process the HiFri® uses is comparable to a traditional deep-fryer. During the deep-frying process the frying fat is the medium for heat transfer. The HiFri® uses hot air and steam as the medium for heat transfer. This special technology allows for a process similar to traditional deep-frying, only with the big difference that no additional fat is added to the French fries and snacks.
